
Vegetarian caviar salad
It might sound like something made up 😁, but maybe it is, or maybe it isn’t. In any case, it’s a very nutritious legume, and that is Beluga lentils, characterized by oval seeds of black color. It’s high in protein, fiber, and iron. And since Beluga has a dark color, it mainly supports the kidneys, which are associated with the element of WATER.
Ingredients:
- About 1/2 cup of uncooked Beluga lentils
- 1/2 cup of uncooked tri-colored quinoa
- 1/2 zucchini
- 1/2 red bell pepper
- Olive oil
- Sea salt
- Nutmeg
- Herb mix (basil, oregano, thyme)
- Freshly ground white pepper
- Bay leaf
- Arame seaweed
- Microgreens – radish
- Roasted pumpkin seeds
Instructions:
1. Rinse the Beluga lentils 3 times and start cooking them. Once boiling, uncover the pot for about 10 minutes to evaporate purines (substances that cause bloating).
2. After 10 minutes, add the bay leaf and Arame seaweed, cover, and cook until tender, about 20 minutes.
3. Meanwhile, rinse the tri-colored quinoa 3 times and cook it in a 1:1.5 ratio (quinoa).
4. Once the quinoa softens a bit, lightly salt it and finish cooking.
5. Sauté sliced bell pepper and zucchini in olive oil.
6. Season with salt, herbs, and pepper. Add a little water and sauté for a bit longer.
7. Finally, add the cooked Beluga lentils and mix everything together.
Serving:
- On a plate, serve 2 scoops of quinoa, 1 ladle of vegetarian caviar, sprinkle with microgreens (radish), and roasted pumpkin seeds.
- Drizzle with lemon juice.
Tips and Tricks:
- Don’t skip the seaweed in this recipe! It supports legume digestion, prevents bloating, and contains iodine, iron, zinc, calcium, sodium, and magnesium.
- If you don’t have Arame seaweed, you can use Hijiki or Wakame instead.
- Instead of bell pepper, you can use carrot or leek.
